Ingredients

Filling

2 cups preservative-free desiccated coconut
1 tablespoon Akaure Beet Boost powder
1/2 cup coconut milk
2 teaspoons virgin coconut oil, melted
2 teaspoons pure maple syrup
Pinch salt flakes

Coating

2/3 cup coconut oil, melted
1/2 cup pure maple syrup
2 teaspoons pure vanilla extract or vanilla bean paste
2/3 cup cacao powder
Freeze dried raspberries or strawberries


Method

1. Mix coconut and Akaure Beet Boost powder in a medium bowl. Add coconut milk, coconut oil, pure maple syrup and salt.
Stir until mixture comes together.
2. Firmly roll mixture in teaspoon-sized balls. Place in the freezer to set for at least 20-30 minutes.
3. Once coconut balls are chilled and set, whisk coconut oil, maple syrup, vanilla and cacao until smooth.
4. Prepare a baking tray with baking paper. Use wooden skewers to carefully dip coconut balls into the cacao mixture until
evenly coated. Carefully place each ball onto the baking paper and sprinkle with freeze dried raspberries or strawberries.
5. Chocolate coating will set within a few minutes. One set, transfer to an airtight container and keep in the fridge or
refrigerator until ready to serve.
