Shiitake

Lentinula edodes (Shiitake) was revered in ancient China and Japan as a culinary and medicinal specialty. The emperors of China were said to have eaten great quantities of Shiitake mushroom to stave off the ravages of time, and slow down the aging process. They called these medicinal dishes yakuzen, and they were highly prized for their strengthening and restorative qualities. 

Having been used in Traditional Chinese Medicine (TCM) for over 6,000 years, modern analysis suggests that the healthful benefits of the Shiitake mushroom come from its polysaccharides (beta-glucans), which assists in reducing free radical damage and helping maintain cell integrity. Mushrooms also contain valuable antioxidants, ranking amongst the highest in the vegetable kingdom. Its potency is highly sensitive to methods of harvesting, storage and cooking methods used. Shiitake can be used as a garnish to a dish, or is commonly combined with its mushroom cousin, the beautiful Reishi, to support immune function and build stamina.
